He only serves fish caught from the wild; rice from organic farms; naturally brewed rice vinegar, shoyu, miso and mirin; sea salt sun-dried in old-style saltpans; and fertilized eggs from free-range chickens. His water is carefully filtered. And since the day he opened this shop, 22 years ago, he has shunned all artificial additives.

In line with COVID-19 guidelines, the government is strongly requesting that residents and visitors exercise caution if they choose to visit bars, restaurants, music venues and other public spaces.
