As a dining destination, Auberge Eaufeu has just about everything going for it. Located in Kanagaso, a village deep in the countryside of the southwest corner of Ishikawa Prefecture, it feels remote but still readily accessible. Housed in a beautifully converted former school building, Eaufeu’s distinctive character is unlike anywhere else in Japan.

As its name indicates, Eaufeu also has its own rooms — although it bears little resemblance to a typical French auberge. Repurposed from the erstwhile classrooms, they are furnished with contemporary comforts, luxury amenities and decorated with an eclectic mix of contemporary art.

Most importantly, though, you will dine exceptionally well. The menu at Eaufeu is as sophisticated and satisfying as you’d expect to find in any Japanese metropolis. Yet it is strongly rooted in its terroir, featuring almost entirely local ingredients, reflecting the seasons and prepared with creativity and finesse.
