Ramen makes progress at Gonokami Suisan
Change comes in subtle increments in the ramen world, rarely in sudden leaps. That's why it was exciting to discover Gonokami Suisan and its hip, young crew earlier this year in the backstreets north of Kanda Station. Last December when it opened, lines formed around the block to sample the trademark seafood ramen. Unlike Kyushu-style agodashi broths, which are light and clear, the soups at Gonokami Suisan are thick and comforting, like a French bisque.

Shiogensui: Ramen worth its salt
The shinkansen isn't the only thing connecting Okayama to Osaka these days. You can add shio (salt) ramen to that list. I had my first bowl of Shiogensui ramen in Soja, Okayama Prefecture. It's also where I had my second bowl, on another occasion, before I finally made my way to the source, the original Shiogensui store, not far from Shin Osaka Station.

Shiga foodies to look for a few good men
This weekend, diners in Otsu, Shiga Prefecture, will get the chance to vote for their favorite ikemen. Although this term is used to describe an attractive man, the most important men (noodles) at this year's Ikemen Battle will be those steaming in hot broth. The contest's title is a pun, with the "men" in "ikemen" represented by the kanji character for noodles.
