Yukiguni Maitake Co. said Monday it will open a mushroom plant in New York state in 2012 to produce 2.3 tons of "maitake" mushrooms a day, or 580 tons a year.

The plant will enable the Niigata Prefecture-based food company to sell locally produced fresh mushrooms in the United States, it said.

Its U.S. subsidiary, Yukiguni Maitake Manufacturing Corp. of America, has conducted local market research for the past several years prior to construction of the plant.
