Have you heard? There's a Michelin two-star chef running a two-month pop-up in central Tokyo. But this one is not inside a plush, high-rise hotel. It's a food truck — or kicchin kā (kitchen car), as they're known here — and it's the brainchild of one of Japan's most renowned chefs, Yoshihiro Narisawa.

Japan's top chefs grapple with sustainable eating
After the Asia's 50 Best Restaurants awards ceremony in Singapore last month, chef Yoshihiro Narisawa was in high spirits, despite the late hour and the tropical February heat. His Tokyo restaurant, the eponymous Narisawa in the Aoyama district, had been named Best Restaurant in Japan for the second year in a row, and the Aichi native was hosting an after-party to celebrate.
