Tsunan Sake Brewery Speaks at the Symposium “The Potential of Sake × Longevity”
Niigata, Japan — Tsunan Sake Brewery Co., Ltd. At the symposium, cutting-edge research and commercialization trends connecting fermentation and longevity were shared. Tsunan Sake Brewery introduced its initiatives on sake upcycling and collaborative research on sake-derived nanoparticles (SAKESOME). Scientific Background
Aging is closely associated with increased oxidative stress, cellular senescence, and loss of tissue homeostasis—all of which critically influence healthy life expectancy. Fermentation-derived components such as ergothioneine, agmatine, and α-EG, as well as sake-derived nanoparticles (SAKESOME), have shown potential roles in antioxidant defense, vascular relaxation, and intercellular communication.
This event highlighted Tsunan Sake Brewery’s efforts to merge traditional sake brewing with advanced biotechnology—such as valorizing sake lees through upcycling and exploring bioactive components—to uncover new possibilities for Japanese sake.
