Crowdfunding Goal Achieved! Introducing GO LUNAR – A Junmai Daiginjo Brewed with Tsunan Sake Brewery’s Latest Fermentation Technology
Tsunan Sake Brewery Co., Ltd. (Head Office: Akinari, Tsunan Town, Nakauonuma District, Niigata Prefecture, Representative Director: Kengo Suzuki, hereinafter “Tsunan Sake Brewery”) is pleased to announce that the crowdfunding campaign, “A Sake Brewery on the Moon! Limited Sale of Junmai Daiginjo Brewed with the Latest Fermentation Technology, Aiming for Lunar Brewing,” held from February 19 to March 31, 2025, has successfully reached 100% of its target goal of 500,000 yen.
Background
Fermentation is a sustainable technology capable of producing food even in resource-limited or closed environments, offering potential applications in future space-based food production. At Tsunan Sake Brewery, we are pursuing the challenge of bringing the power of fermentation into space, guided by our vision of “establishing a sake brewery on the moon by 2040.” As part of this initiative, we have already launched a virtual brewery in the metaverse called “Lunar Brewery” to explore the possibilities of sake brewing in extraterrestrial environments.
Project Overview
GO LUNAR is a Junmai Daiginjo sake that merges Tsunan Sake Brewery’s traditional brewing craftsmanship with cutting-edge fermentation technology. It is brewed using premium Koshihikari rice from Uonuma and meticulously controlled fermentation conditions to extract refined ginjo aromas at low temperatures. Further aged in wine barrels, this sake represents a bold step toward new flavor possibilities in Japanese sake. Brewing began in January 2025, and bottles will be delivered to crowdfunding supporters as part of this exclusive release.
