Tsunan Sake Brewery Pays Courtesy Visit to Professor Salengke of Hasanuddin University
In July, 2024, Kengo Suzuki, President of Tsunan Sake Brewery, visited Hasanuddin University in Makassar, Indonesia, where he had a meeting with Professor Salengke of the Faculty of Agriculture. The purpose of this visit was to explore the potential for deepening industrial and academic collaboration between Japan and Indonesia.
Overview of Research at Hasanuddin University
Professor Salengke is leading research at Hasanuddin University that focuses on adding value to primary industries in South Sulawesi. The university’s research activities are diverse, with notable emphasis on the fermentation processes of cacao and the study of seaweed utilization. The fermentation technology for cacao developed by the university significantly contributes to improving the quality of local agricultural products and facilitating their entry into export markets. Additionally, research on seaweed promotes the sustainable use of marine resources. Professor Salengke’s research efforts contribute to the development of local communities and economic growth, and the university works closely with local governments and businesses.
Integration of Japanese Technology with Indonesian Industry
President Suzuki explored the potential of introducing advanced Japanese technologies, particularly brewing techniques developed at Tsunan Sake Brewery, to Indonesia. He believes that these techniques could add new value to the local primary industries. Specifically, Japanese brewing techniques, honed in sake production, have the potential to enhance Indonesia’s cacao fermentation processes and methods of seaweed utilization. Moreover, President Suzuki proposed incorporating molecular biological research approaches from Japanese research institutions to further deepen local research and increase its contribution to industry.
Future Prospects
Through this visit, President Suzuki and Professor Salengke confirmed the possibilities of a technical collaboration between Indonesia and Japan. They discussed the potential of introducing Japanese technologies in cacao fermentation processes and seaweed research, aiming to increase the value-added to local industries and develop products that can compete in global markets.
Moving forward, researchers and businesses from both countries plan to collaborate on projects that aim to socially implement research results. In particular, leveraging the fermentation techniques of Tsunan Sake Brewery and the molecular biological research outcomes from Japan, the initiative aims to create new industrial value. This collaboration is expected to bring significant benefits to both Japan and Indonesia.
