Kinki University plans to open a restaurant in Osaka next April that serves bluefin tuna farmed from eggs — a breakthrough technology that the university was the first to develop.
While concerns have grown over the decline of bluefin tuna stocks, the new restaurant near JR Osaka Station is expected to draw customers as an eatery where they can have sashimi and other dishes incorporating the high-quality fish without the worry of affecting stocks.
The restaurant's management will be entrusted to an affiliate of beverage producer Suntory Holdings Ltd., university officials said.
It will also offer tablet computers to customers so they can learn more about the university's tuna-farming technology, the officials said.
The 220-sq.-meter restaurant will accommodate about 100 customers.
