On Sept. 12, the Hyatt Regency Tokyo will hold a special dinner event featuring a rare Imperial Court tradition called hocho shiki (kitchen knife ceremony).
A master of the prestigious Ikama School of hocho shiki will be invited to conduct the ceremony at the hotel’s atrium lobby, where gagaku Imperial Court music will be played. The master, wearing ancient court attire, will skillfully carve a fish using a special kitchen knife and chopsticks, without once touching the fish with his hands.
The pre-meal ceremony, passed down from the Heian Period, is practiced at the Imperial Palace and at some shrines around Japan.
The ceremony runs from 4 p.m. to 4:30 p.m., followed by a Japanese course dinner at the banquet hall from 5 p.m. to 7 p.m. The dinner event costs ¥18,000 per person, including drinks, tax and service charge.

Starting Sept. 1, The Peninsula Spa by ESPA’s new treatment costs ¥23,000 for 50 minutes or ¥31,500 for 80 minutes, including tax and service charge. The Peninsula Spa by ESPA is open daily from 10 a.m. to 10 p.m.

The Hotel Okura Fukuoka’s Baron Okura Wine Dining and Bar is offering a special full-course dinner accompanied by Dom Perignon Champagne on Friday evenings until Sept. 24.
