Q1: What was your first encounter with Japan?

Well, my first real encounter with Japan was with “Goldrake,” the Italian name of “UFO Robot Grendizer.” It was the first manga to come to our country — we kids were all glued to the TV fighting Dr. Hell with him.
I arrived in Japan about two years ago after a spell in India. We live in Osaka, a city that I like a lot, with an incredible food culture.

Q2: Please state your motto in life and why you have chosen it.

My background is as a chef. I have worn the apron from more years than I can remember and my motto has always been that “Happy chefs makes happy food.” As simple and silly as it may sound, it applies to everything in life. Be happy, smile and everything around you can only be positive.

Q3 : Over your career, what achievement are you the proudest of?

I love my work, and I could talk about when I won this award or when I had that famous person as a guest. However, what I am proud of is that the hospitality industry gave me the chance to travel the world, engage with different cultures and meet new friends. And I am not finished yet — I am looking forward to go to new places.

Q4 : What are your goals during your time in Japan, your current position or in life?

One is to have fun with the team, make our guests happy and get them to come back to Hyatt Regency Osaka, because that's the core of our profession.
However, what’s more important is to discover Japan and its culture with my family. Any time we have few days off we are on the road, visiting the country, eating anything and everything.
