Farmers in this mountainous area in the eastern Chinese coastal province of Fujian know they have one big advantage over many other mountain-locked farmers -- humid air and an annual temperature of 18 degrees. With that kind of climate, they know what to grow and grow well: shiitake mushrooms, and plenty of them.
